It’s been a while! Summer happened, with vegan wedding cake orders and celebratory cakes that needed making in the cafe. Then of course there were much needed holidays. And Paris.
However, I have been inspired to film more baking adventures and finally have the time to post them. So without much further ado, here’s my baking video for another Vegan Mug cake. Dark chocolate and Raspberry this time and best microwaved until gooey, rather than cakey for a really intense sweet hit.

Microwave Cake. Chocolate and Raspberry, Vegan AND Soya Free

Microwave Mug Cake. Vegan and Soya Free. Chocolate and Raspberry cake, ready in minutes.
1// Use two Raspberry Green tea bags in a regular mug and pour on boiling water up until half way. Leave to cool.
2// In a fairly large, microwave safe mug, mix your dry ingredients.
1/3 Cup self raising Flour
1/4 cup Caster Sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
Give them a good stir through
3// Then add your ‘wet’ ingredients to the mug
1 1/2 Tablespoons vegetable oil
1/4 teaspoon vanilla essence
3 Tablespoons Raspberry Green Tea
4// Give the mixture a good stir through and add 2 Tablespoons Dark Chocolate drops. Give the mixture another stir
5// Microwave on medium high for 1 1/2 minutes and leave for another 2/3 minutes. Mine was perfectly cake-like on the outside and gooey on the inside was was just heaven in a mug. But by all means, heat for another 30 seconds if you prefer your cake to be like a cake!
